INGREDIENTS (4/6 PEOPLE)

6 medium new potatoes (unpeeled)
200 g mayonnaise
1 tbsp mustard (or 2)
1 tsp garlic powder
Salt and ground pepper
6 bacon strips
Chopped parsley
1 tbsp olive oil
1 tsp vinegar

POTATO SALAD WITH BACON

PREPARATION:

POTATOES: Cut the potatoes in quarters and cook for 10 minutes (do not overcook), drain and reserve.

BACON: Grill the strips of bacon until they are crispy. Cut them into small pieces.

SAUCE: In a bowl mix the mayonnaise with all the other ingredients, taste and correct the seasoning if necessary.

SERVE: Place the warm potatoes in the sauce, add the cut bacon and mix gently with your hands.

This side dish is perfect warm, but you can also make it ahead of time and serve cold, gaining time to be with your family or friends.
